Menu Plan Monday is back! I am excited to get organized and menu planning again. I have to get caught up on posting recipes, so this week, most recipes and pictures will post the day after I make/take them. Hopefully by next week, I'll have them all ready for you on Monday! I'm also excited for my sister Katherine to jump in and inspire me as co-blogger at Haute Plates. What an exciting way to kick of 2010 in my kitchen!
Monday - Herbed Pork Tenderloin with mashed potatoes and roasted asparagus
Tuesday - Matt has a work meeting and I have Glass Slipper Guild, so probably something easy like Kid's Soup & Biscuits.
Wednesday - Taco Salad and Quesadillas (I'm gonna use THIS crock pot recipe to make the chicken for the salad. YUM!) and perhaps a sweet treat for dessert in honor of Katherine's Birthday!!
Thursday - Habana's Salmon with Cuban Black Beans and Cilantro Rice
Friday - Spaghetti & Meatballs with garlic bread (I put my sauce and meatballs over a bed of steamed spinach)
Saturday - Roasted Red Bell Pepper & Tomato soup with steamed artichokes
Sunday - "Snack Bar is now Open" (This is what my Dad used to say when he made dinner when I was a kid. It meant cleaning out the fridge of all the weeks leftovers and passing them off as mini meals!) The kids are going to my parent's house for dinner as Matt and I will be attending his football banquet at Harborside.
