Low Fat Granola


I LOVE this sprinkled over Horizon Non Fat vanilla yogurt as a great energizing and satisfying snack. If I have a sweet tooth that I'm trying to hold at bay, this will often do the trick! If I want to make breakfast out of it - I'll cut up whatever fresh fruit we have on hand - bananas, pineapple, strawberries - and add it to the granola and yogurt to make a muesli.



Ingredients

3 cups rolled oats
1 cup slivered almonds
1 cup sunflower seeds (shelled)
3/4 cup shredded sweet coconut
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup plus 2 tablespoons maple syrup
1/4 cup canola oil
3/4 teaspoon salt
1 cup raisins

Directions
Preheat oven to 250 degrees F. 
Line 2 cookie sheets with parchment paper or silcone baking mats.
In a large bowl, combine the oats, nuts, coconut, cinnamon and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt.
Combine both mixtures and pour onto the 2 cookie sheets.

Spread evenly, and bake for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into a large bowl.
Add raisins and mix until evenly distributed. 
ENJOY!!
Will keep in an air tight container for 2 weeks.
