What's For Lunch: Portobello Burgers


At least once or twice a week, I like to make myself something yummy and sorta "gourmet" for lunch. It makes staying home all that more fun. Recently I invited my next door neighbor over and we enjoyed these sandwiches while the kids reaked havoc on the house. It was fabulous!

Ingredients
1/4 cup olive oil
1/4 cup balsamic vinegar
2 Tablespoons crushed garlic
1 teaspoon Kosher salt
1 teaspoon black pepper
1 jar roasted red bell peppers (I love the one from Trader Joes)
8 portobello mushrooms (about 1 pound total), stems removed
4 hamburger buns
5 ounces fresh goat cheese, cut into 4 equal slices
(or crumbled works fine too...again, I like the package at Trader Joes)
1 bunch of fresh basil

Directions
In a shallow dish, whisk together oil, vinegar, garlic, salt, and pepper.
Add mushrooms; toss gently to coat.
Marinate at room temperature for at least 30 minutes.
(I always refrigerate, and leave them overnight!)
Lightly grease griddle and heat to medium.
 
Cook mushrooms until lightly charred and tender, 3 to 4 minutes per side.
Add bell peppers to the griddle just to heat through. 
Dividing evenly, top bottom half of each bun/roll with bell pepper, mushrooms, goat cheese, and basil.
Close burgers, and serve immediately. 
ENJOY!
 
(Beware! These burgers are extremely juicy - especially if you allow the mushrooms to soak up the marinade overnight.)
