This recipe was shared with me by Rachel of No 17 Cherry Tree Lane. She tweeted something about eating "The most amazing and yummy taco salad!" for dinner one night last week and I had to ask for the recipe. Rachel says the beauty of this recipe is you can easily add or omit items to your liking. Taco Salad is one of our family favorites. So I can't wait to try this one. It sounds Supercalifragilisticexpialidocious!
1 pound ground and cooked beef or turkey
3/4 head of lettuce, chopped
1 cucumber sliced and diced (but can remain as choppy as you would like)
1 cup halved cherry tomatoes
1 cup cubed cheddar cheese
3 cups of Doritos crushed
Catalina dressing (enough to coat the salad liberally but not make it soggy)
Toss all ingredients together, plate and ENJOY!
