Breakfast Cookies


This recipe is all over the internet in various forms. I attempted to make it a "bit" healthier with whole wheat flour instead of white, a 1/4 cup less sugar, and bran instead of cornflakes. Most recipes I found called for raisins, but we at the Bringing Up Burns household are not so fond of raisins...so I used blueberries! These "cookies" are a nice combo of crunchy, salty, and sweet. And are the perfect thing to grab on the go the days our mornings start before dawn!

Breakfast Cookies

1/2 cup butter, softened
1/4 cup sugar
1/4 cup brown sugar
1 egg
1 cup whole wheat flour
1/4 teaspoon baking soda
10 bacon strips, cooked and crumbled
2 cups corn or bran flakes
1/2 cup frozen blueberries

Preheat oven to 350 degrees.
In a mixing bowl, cream butter and sugars together.
Beat in egg, then add flour and baking soda and mix well.
Fold in bacon, branflakes and blueberries.
Drop batter by rounded spoonfuls about 2 inches apart onto cookie sheets.
Bake for 10-11 minutes or until lightly browned.
Cool for 2 minutes before removing to wire racks.
