Menu Plan Monday - January 3rd

Happy 2011! Here is my plan for our week. Trying to be more healthy, more organic, and more adventurous in the new year!

Monday: White bean & winter vegetable soup (with grilled cheese for the kids)
Tuesday: Spice-rubbed cod filets with lemon rice and zucchini
Wednesday: Citrus jalapeno herb roasted chicken with orange-mint couscous
Thursday: Potato & leek frittata with bacon and fresh pineapple (in this months Everyday Food)
Friday: Turkey taco salad with tomatillo dressing

AM Smoothie:
Cucumber Blueberry
New Breakfast: Warm & Nutty Cinnamon Quinoa

2011 Running Goal: 10miles/week (0/520)
