Strawberry Jello Cake


I had two boxes of Strawberry Jello left over from the Valentine's cups I made earlier in the week. So after spending a good hour Googling and reading, this is the recipe I came up with for Molly's Minnie Mouse cake. It's a combination of the two I thought sounded the best (and were the easiest!) I thought it turned out very good for a "from the box" cake mix. Best of all it was PINK! As well as moist, fluffy, and Strawberry sweet. My Birthday Girl loved it!

Ingredients
1 box White cake mix
4 eggs
1/2 cup water
1 cup oil
1 (6oz) box Strawberry jello
1/2 cup frozen strawberries, thawed and pureed.

Directions
Preheat oven to 350 degrees F.
Grease and flour two 9 inch round cake pans.
Mix all the ingredients together, scraping down sides of bowl.
Pour into pans (mine made enough for about 2 1/2 cups in each pan.)
Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
Remove from oven.
Cool 5 minutes, then turn out of pans onto rack and cool completely.
Frost with Strawberry or Buttercream Icing.

I totally cheated this time around, as I was running out of time, and used fondant and canned frosting! (Easy to tint and pipe in a hurry and right up a 4 year old's alley! Plus Minnie's bow held it's shape perfectly!) But if you wanted to make your own simple Strawberry icing, try this:

Ingredients
1 stick unsalted butter, softened
1lb box powdered sugar
1/2 cup frozen strawberries, thawed and pureed.

Directions
Cream the butter and sugar together until light and fluffy - about 2 minutes.
Add 1/3 to 1/2 cup of berries until desired spreading consistency.
Beat until creamy.
Spread on cake.
